Cheeseburger Soup



It just seems like fall is the time to start getting out those soup recipes. I have been making this particular recipe for a few years now and the family loves it. The other day, me and Lisa and Renea went over to Olive Garden to eat lunch. I ordered the Tuscany soup for the first time and it was so good I wanted to lick my bowl but I restrained myself! Anyway, that Tuscany soup reminded me of my Cheeseburger Soup. They use sausage in the Tuscany and I use Hamburger meat. I love this soup.....I have never been a big soup eater but this one got me. So, since it is getting to be fall and will soon be winter.....I wanted to share this recipe with you.


Cheeseburger Soup
INGREDIENTS

1/2 pound ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
4 tablespoons butter
3 cups chicken broth
4 cups cubed potatoes
1/4 cup all-purpose flour
16 oz of Velveeta cheese cubed

1 1/2 cups milk
1/4 cup sour cream
DIRECTIONS
In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.

I love the allrecipes site. I have my own little digital recipe box there. I have all my favorites recipes saved there. I used Velvetta instead of chedar cheese as written on this recipe. I love soup and adapted my own favorite Olive Garden recipe for Pasta Fagioli Soup. I'll send it to you when I get home today. Thanks for sharing this one; i can't wait to try it.

It has to be yummy with velveeta cheese. glad you left out the calorie count so when I make it this winter and eat the whole thing I won't feel guilty! see ya soon and hope you are doing well! love ya lisa

Paper Flowers and Fabric Flowers

Well, I'm kind of in a creative funk again. I hate it when this happens! I'm so glad that next weekend I am going to Fredricksberg, TX again to the trade days. I know it will inspire me in all kinds of directions. Meanwhile, while I am trying to get my groove back........I have been making a lot of little short term projects in the paper department. I want to try several of her other flowers instructions. Now, what will I do with them? Who knows? Does it really matter if I am enjoying myself? Laughing Out Loud

I still have some work to do on these paper mache letters. I finally found something to do with all the bits and pieces of things that I keep because they will be perfect for some piece of art.....some day. Today is the day! I really love this piece/grouping. LOL .....a good message don't you think? Go ahead, Laugh Out Loud.....it is very healthy and therapeutic. Today, I bought the soundtrack to Mamamia and I have enjoyed the heck out of it. I really enjoyed that movie. I have discovered that people either love it or hate it. I just think that it is so cool that Meryl Streep totally stepped out of her norm and went for the musical. She did a great job and I can't wait to see it again. It is a great girlfriends and sisters movie. I highly recommend that you go and get it and go to your girlfriends house and watch it and....oh....I don't know......LAUGH OUT LOUD!
